Ghee potato chips are potato chips fried in ghee — butter that has been slowly simmered until the water and milk solids are removed, leaving pure golden butterfat. Frying in ghee gives a potato chip something seed oils never could: the deep, toasty flavor of browned butter. What makes ghee different
Ghee is clarified butter, used for thousands of years in South Asian cooking. Clarifying does two useful things. It removes the milk solids, which makes ghee virtually lactose-free. And it raises the smoke point to roughly 485°F — well above butter — which makes it beautifully suited to frying.
