The Golden Standard

Ghee vs. Avocado Oil: What's the Difference in a Potato Chip?

Avocado oil has become the polite default of the better-chip world — the oil brands reach for when they want to say “not seed oils” without changing how anything tastes. Ghee is the opposite bet: a fat you choose because you can taste it. Both are legitimate. Here’s how they actually differ in a bag of chips.

What they are

Avocado oil is pressed from avocado flesh, then typically refined until it’s nearly flavorless. Refined, it has one of the highest smoke points in the kitchen — around 500°F.

Ghee is clarified butter — butter simmered until the water and milk solids are gone, leaving pure butterfat with a smoke point around 485°F. The clarifying also leaves it virtually lactose-free.

On paper they’re neighbors: both traditional-ingredient fats, both stable at frying heat, both a world away from canola. In your mouth they’re strangers.

Neutral vs. flavor-forward

Refined avocado oil is engineered to disappear. An avocado-oil chip tastes like potato and salt — clean, simple, and a little anonymous. There’s nothing wrong with that; it’s just the same experience as a seed-oil chip with a better ingredient list.

Ghee doesn’t disappear. It fries the potato in browned butter, and you taste it — toasty, golden, slightly sweet at the edges. The fat isn’t packaging for the chip; it’s an ingredient in the recipe. That’s the entire reason ghee potato chips exist as a category of one.

The fine print

Two honest notes. If you’re strictly vegan, avocado oil is your fat — ghee is dairy (though vegetarian-friendly and virtually lactose-free). And avocado oil’s neutrality is a real advantage when a brand wants one oil for twelve wildly different seasonings. We only need ours to do one thing: make a potato taste like the best version of itself.

The short version

Avocado oil is a better ingredient list. Ghee is a better ingredient list and a flavor. If you want a chip that tastes like something happened in the fryer, that’s the difference you’ll notice in the first bite.
