Fair question. Here's the answer, minus the jargon.
Ghee is butter, perfected for heat
Ghee is clarified butter: butter that's been gently simmered until the water evaporates and the milk solids separate out, leaving pure golden butterfat behind. What remains is deeply flavorful — nutty, rich, almost caramel-like — and remarkably stable at high temperatures.
That last part matters more than it sounds. Regular butter burns quickly in a fryer because its milk solids scorch. Ghee, with those solids removed, can handle serious heat while keeping its flavor intact. That's why it's been the cooking fat of choice in South Asian kitchens for thousands of years — long before anyone put it near a potato chip.
Ghee vs. butter: the short version
Same origin, different behavior. Butter is roughly 80% fat plus water and milk solids; ghee is nearly all fat. Butter tastes creamy and fresh; ghee tastes toasted and nutty, because the milk solids brown before they're strained out. Butter struggles above medium heat; ghee is built for it.
For frying — which demands sustained high temperatures — that makes ghee one of the few traditional fats that can do the job and leave flavor behind. Most chip companies solve the heat problem with neutral seed oils, which work, but bring nothing to the table. Ghee solves it while making the chip taste better.
Why grass-fed matters
Not all ghee is equal, because not all butter is equal. Ghee concentrates its source — so we start with 100% grass-fed ghee from Australian dairy cows. Grass-fed butterfat is prized for its rich color and depth of flavor, and when you're making a chip with three ingredients, the quality of each one is the whole game.
